- 1 large carrot, peeled and chopped
- ½ cup diced, sweet onion
- 1 inch knob of ginger, peeled and rough chopped
- 2 Tbsp diced celery
- 3 medjool dates, pitted
- 1 Tbsp tahini
- 1 Tbsp mellow white miso (optional)
- 1 Tbsp rice vinegar
- ½ cup water

- 1. Blend all ingredients in a high powered blender until smooth. Alternatively, you can use a food processor. Pulse the ingredients, scraping down the sides as needed until smooth.
