- 1 (12 oz) package of button or baby portabella mushrooms
- 2 Tbsp whole grain flour
- 1–2 cups low-sodium vegetable broth (see tips below)
- 1–2 Tbsp low-sodium soy sauce or tamari
- Salt and black pepper, to taste (optional)

- 1. Clean and slice the mushrooms, then sauté them until soft, adding water if needed. (about 5 minutes).
- 2. Mix the flour with ¼ cup of the vegetable broth until smooth.
- 3. Add half of the flour-broth mixture, the soy sauce, and the remaining vegetable broth to the mushrooms.
- 4. Bring gravy to a simmer for 3–5 minutes, stirring regularly.
- 5. If the gravy is not thick enough for your taste, add the remaining flour mixture and continue heating and stirring until it thickens.
- 6. Serve warm.

- 1. The amount of broth you should use depends on how thick you want your gravy: for a thicker gravy, use less.
