- 1 ½ cup unsweetened plant-based milk
- ¼ cup applesauce
- 1 tsp apple cider vinegar
- ½ cup rolled oats
- ¾ cup chickpea flour
- ¼ cup almond flour
- ½ cup rice flour
- 1 ½ tsp baking powder
- ¼ tsp baking soda
- ⅛ tsp sea salt
- ½ + ⅛ tsp ground cinnamon, divided
- 1 tsp vanilla extract
- ¼ cup date paste or maple syrup
Fruit Sauce
- 2 cups frozen fruit (mango, peach, strawberry, blueberry, etc.)
- 1 cup freshly pressed apple juice (or ¼ cup water + ¼ cup date paste)
- ⅛ tsp sea salt
- 1 Tbsp kuzu
- ⅛ cup cold water

- 1. Combine all ingredients in a blender.
- 2. Pour the mixture into a waffle iron and cook.
- 3. Serve with fresh fruit or fruit sauce.
Fruit Sauce
- 1. In a small saucepan, combine the fruits, apple juice, and sea salt. Bring to a boil.
- 2. In a separate container, mix the kuzu and cold water. Set aside.
- 3. Once the fruit and juice mixture comes to a boil, gradually add the dissolved kuzu while stirring with a whisk. Continue stirring until the sauce thickens.
- 4. Serve over waffles, pancakes, or oatmeal.
