
I recommend using garbanzo beans (I love them in everything!), but feel free to use whatever bean you have on hand. Also, I find that it’s best to keep the dressing simple so that the fresh flavors of the other ingredients can shine through.

- 2 pints strawberries, washed, de-stemmed, and halved
- 3 cups (2 15-ounce cans) cooked garbanzo beans, rinsed and drained
- 2 cucumbers, peeled, seeded, and chopped
- 1 red onion, diced
- ½ cup basil, chopped
- 2 T minced fresh mint
- Juice of 2 lemons and the zest of 1, or to taste
- Sea salt to taste
- Black pepper to taste

- 1. Combine the strawberries, garbanzo beans, cucumbers, red onion, basil, mint, and lemon juice and zest in a bowl.
- 2. Season with sea salt and black pepper to taste. Chill for 1 hour before serving to let the flavors bloom.
