- 1 ¾ cups cooked chickpeas
- ⅓ cup rolled oats
- 2 Tbsp nutritional yeast
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- ¼ cup unsweetened, plain plant-based milk
- ½ cup whole-grain bread crumbs

- 1. Preheat oven to 350 degrees F. Add all ingredients except plant-based milk and bread crumbs to a blender or food processor. Pulse to combine, but be careful to not overprocess. You want to maintain some texture.
- 2. Using your hands, shape the mixture into 8–10 nuggets.
- 3. Add the plant-based milk and bread crumbs to separate bowls. Dip each nugget into the plant-based milk then the bread crumbs, coating them well.
- 4. Place the coated nuggets on a parchment-lined baking sheet and bake for 15–18 minutes. Enjoy with your favorite condiments. I like to mix plant-based mayo with ketchup.
