- ⅓ cup whole-grain flour of choice
- 1 Tbsp cornstarch
- 1 tsp salt, divided
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ cup unsweetened, plain plant-based milk
- 2 cups whole-grain bread crumbs
- 1 Tbsp Italian seasoning
- 1 Tbsp nutritional yeast
- 1 zucchini, ends removed and cut into French fry sticks

- 1. Preheat oven to 425 degrees F and line a baking sheet with parchment paper.
- 2. In a bowl, combine flour, cornstarch, ½ teaspoon salt, garlic powder, and onion powder. Add plant-based milk and mix well to create batter.
- 3. In another bowl, combine bread crumbs, Italian seasoning, nutritional yeast, and remaining salt.
- 4. Dip each zucchini strip into the batter, then into the bread crumb mixture. Make sure to coat each strip completely with both mixtures.
- 5. Lay the breaded zucchini fries on the prepared baking sheet and bake for 10 minutes. Remove from the oven, flip the fries, and bake for another 10 minutes. For a crispier texture, you can broil the fries for a few minutes before removing them from the oven. You can also air fry for 15 minutes at 375°F.
- 6. Serve with your favorite condiments and enjoy!
