- 4 cups baby spinach
- 4 cups baby kale
- ½ cup fresh mint, chopped
- 2 cups cooked quinoa
- ¼ cup green onion, diced
- 2 cups pomegranate seeds
- 2 oranges, peeled and sliced
- 2 Tbsp chopped walnuts
- 2 Tbsp lime zest
Dressing
- ¼ cup white balsamic vinegar
- ¼ cup freshly squeezed orange juice
- 3 Tbsp freshly squeezed lime juice
- 1 Tbsp date paste
- Zest of one lime

- 1. In a large bowl, stir in spinach, kale, mint, quinoa, lime zest, and green onion. Top with pomegranates, orange slices, and walnuts.
- 2. To make the dressing, whisk all ingredients together well in a small bowl.
- 3. Drizzle the dressing over salad, and serve immediately.
