- 1 small carrot, thinly shaved
- 2 cups thinly shaved red cabbage
- ¼ cup thinly shaved red onion
- ¼ cup chickpeas, rinsed
- 1 Tbsp chopped parsley
- Ground black pepper to taste

- 1. In a medium bowl, stir together the vinegar, maple syrup, celery seed, salt, and pepper. Add the remaining ingredients and toss until evenly mixed. Serve immediately
