- 1 cup diced onion
- 1 cup diced carrots
- 2 small potatoes, cubed
- 1 celery stalk, diced
- 2 cups cooked chickpeas
- 6 cloves garlic, crushed
- ½ tsp dried thyme
- ¼ cup vegan “chicken” seasoning
- 4 cups low-sodium vegetable broth
- 2 cups water
- 4 ounces cooked whole grain spaghetti
- Salt and pepper, to taste
- Chopped fresh cilantro, to taste

- 1. Sauté the onion in a medium saucepan over medium heat until it begins to soften, about 3 minutes.
- 2. Add the carrots, potatoes, and celery (if using), garlic, thyme, “chicken” seasoning, vegetable broth, and water.
- 3. Cook over medium-low heat until all the vegetables are tender, about 10–15 minutes.
- 4. Add the pasta.
- 5. Season with salt and pepper to taste.
- 6. Serve with a sprinkle of fresh cilantro on top.

- 1. You can add more of your favorite vegetables to this recipe or remove some from the ingredient list, such as the celery.
- 2. You can also add ⅓ cup of chopped soy curls in step 2 for a chicken-like texture.
