- ½ cup onion, minced
- 4 cups cauliflower, chopped into florets
- 2 cups of vegetable broth
- 5 cups of water
- 4 garlic cloves, crushed
- 1 ½ tsp of sea salt
- 3 Tbsp nutritional yeast (optional)
- ¼ cup chives or cilantro, chopped (optional)
- Roasted corn kernels, for serving

- 1. In a medium pot, sauté the onion in 1 Tbsp of vegetable broth over medium heat for 5 minutes or until slightly translucent.
- 2. Add the rest of the ingredients, bring to a boil, and cook for 8-10 minutes or until the cauliflower is soft.
- 3. Using an immersion blender or a regular blender, process until smooth.
- 4. Serve with chives or cilantro and roasted corn.
