- ½ cup diced onions
- 4 garlic cloves, minced
- ⅛ tsp red pepper flakes (optional)
- 4 Tbsp vegetable broth, divided
- 4 cups chopped collard greens
- 2 tomatoes, diced
- 2 Tbsp natural peanut butter mixed with 1/4 cup vegetable broth
- ½ tsp lemon juice
- Salt, to taste
- ½ cup crushed peanuts
- Plátanos Maduros.

- 1. In a medium saucepan, saute onions, garlic, and red pepper flakes (if using) in 2 Tbsp of vegetable broth over medium-high heat for 3-5 minutes, until onions brown.
- 2. Add remaining 2 Tbsp of vegetable broth, collard greens, tomatoes. Cover and cook over medium heat for 3-5 minutes.
- 3. Add peanut butter mixture and lemon juice. Cook for 2-3 minutes.
- 4. Season with salt and add crushed peanuts.
- 5. Serve peanut collards on top of Plátanos Maduros.
